
There are very few beers that feel as much like an annual ritual as The Abyss. Each new release carries the weight of its own history, inviting comparison not just to other barrel aged stouts, but to its own past vintages. The 2025 release continues that tradition, offering a bold and layered experience that feels built for patience as much as immediate enjoyment.
The Abyss
Deschutes Brewery The Abyss 2025 was bottled on 12/01/25 and weighs in at 11.4% ABV. It pours a deep black with just a hint of ruby hue when held to the light. A sturdy finger of medium dark brown foam forms and slowly settles with time, leaving sticky lacing clinging to the walls of the snifter.
Burnt malt, coffee, and chocolate hit the nose in full force, followed by notes of oak, bourbon, and a light touch of alcohol. It is expressive without feeling harsh, hinting at both its strength and its structure.
Big malt fills the mouth, coating the tongue with flavors of coffee, milk chocolate, and light char as the carbonation bubbles across the palate. As the beer warms, a bit of oak begins to show through, joined by soft vanilla and cocoa notes. Everything rounds out and softens as the liquid reaches cellar temperature. While the 11.4% ABV does not dominate the flavor, it makes itself known in the body, adding weight and warmth to each sip.
Not Abysmal
The Abyss 2025 drinks well now, but it clearly has time on its side. With age, the carbonation will continue to mellow and the barrel character should become even more integrated. This is a beer built for the long haul, rewarding those willing to stash a bottle away and revisit it down the road.
