A good barrel program often reveals new sides of familiar styles, and this one leans into that idea with enthusiasm. A wheat-based weizenbock already carries a rich, expressive malt character, but resting it in a Kentucky whiskey barrel and adding whole strawberries takes the beer somewhere more layered. Strawberry Stave blends big fruit character with warm bourbon barrel depth, creating something that sits comfortably between dessert-like indulgence and classic barrel-aged complexity.
Strawberry Stave
Strawberry Stave pours a deep burgundy red, allowing just a touch of light to pass through the glass and casting a rich crimson glow. An off-white head rises into a soft pillowy layer before slowly settling down, leaving streaks of lacing painted along the walls of the snifter.
The aroma immediately bursts with fresh sweet strawberries. It feels natural and bright, more like freshly sliced fruit than syrup. Notes of honey and strawberry jam follow close behind, adding depth and warmth. As the beer opens up, a gentle hint of whiskey appears alongside touches of bubblegum from the wheat yeast and a soft layer of oak from the barrel aging.
On the palate, the wheat base provides a smooth and rounded body that carries the fruit beautifully. Light strawberry sweetness spreads across the tongue first, followed by a touch of caramel and warming whiskey that helps keep the fruit from becoming cloying. The barrel character is clearly present but well integrated, bringing subtle oak tannins and a whisper of vanilla that linger into the finish.
When Fruit and Barrels Work Together
Fruit-forward barrel aged beers can sometimes feel like two ideas competing for attention. Strawberry Stave manages to keep the balance in check, letting the strawberries shine while still allowing the whiskey barrel to contribute depth and warmth.
The result is a bold but surprisingly drinkable sipper. The bright fruit character makes the beer feel lively while the barrel aging provides the structure and complexity that keeps each sip interesting. At 11.4% ABV it carries plenty of strength, but the smooth wheat body and layered flavors keep it feeling polished rather than heavy.
