Another year and another awesome release of FSB, a big imperial stout that’s new every time. This year goes over-the-top with vanilla and the results are great. Here’s a look at Fair State Co-op FSB 2021.

FSB 2021

It’s pretty cool when you can partner with The Vanilla Bean Kings. They offer the best in vanilla beans and only the best will do in this delicious brew. How is it this year? Here you go.

A thick luscious liquid pours from the bottle and fills jet-black brew. A small deep-brown head of medium bubbles forms and quickly dissipates, leaving no sign it was once there.

Smooth milk chocolate and lightly roasted malt tickle the nose, with plenty of creamy vanilla coming in thick. There’s just a hint of very light bourbon and oak from the barrel-aging.

There’s plenty of smooth milk chocolate in the first sip, with light carbonation bubbling on the tongue before creamy vanilla fills the mouth. With 2.5lbs of vanilla beans per barrel, it cuts through this big barrel-aged imperial stout and is the star of the show.

A touch of roasted malt bitterness as we head to the aftertaste, where the bourbon barrels make themselves known. There’s light sweet bourbon and a touch of oak tannin. 13.5% ABV makes itself known not only in the body but also in a bit of alcohol heat long into the aftertaste.

It’s always great to see what the yearly FSB will bring as we wave goodbye to another year. Fantastic from the start, this brew has gotten better every year. Each time it’s fun to see how the base beer can start in one spot and be advanced to another.
